Ingredients

  • ½ cup rolled oats

  • ¼ teaspoon baking powder

  • ¼ teaspoon ground cinnamon

  • Pinch of salt

  • ¼ cup finely grated apple

  • ¼ cup almond milk

  • ½ teaspoon vanilla extract

  • 1 spoonful of almond butter (optional)

  • ¼ cup raspberries or chopped strawberries

  • Blueberries

Directions

  1. Preheat the oven to 350°F (180°C). Grease a small ramekin.
  2. In a bowl, combine the rolled oats, baking powder, cinnamon and salt. Add the grated apple, almond milk, vanilla extract and almond butter, if using. Mix until well combined.
  3. In a separate bowl, use a fork to roughly mash the raspberries or strawberries.
  4. Transfer approximately half the oatmeal batter to the bowl with the mashed berries. Mix well.
  5. Pour both oatmeal batters into the prepared ramekin. Either place the batters side-by-side or layer them. Sprinkle some blueberries over the top.
  6. Bake the oatmeal for 25 – 30 minutes, or until the top is dry and a little firm. Enjoy
