Ingredients: (Jamaican Rice Pilaf)
2 ½ cups White Basmati or Jasmine Rice
2 Tbsp. Coconut Oil
1 ½ cups Fresh Onion, diced
5 cups Hot Water
½ cup Chipped Coconut
2 Tbsp. Natural Jamaican Jerk Seasoning
¾ cup Red Bell Pepper, diced
¼ cup Golden Raisins
1 cup Fresh Apples-diced
1 cup Fresh Mango-diced
1 Tbsp. Natural Jamaican Jerk Seasoning (optional as finishing spice)

Dry fry the rice & onions in the coconut oil until the onions are a little transparent. Add the hot water, chipped coconut & Jamaican Jerk Seasoning to the rice and bring to a boil. Stir only once; cover and reduce heat to simmer 15 min. Fold in Red Bell Peppers and Raisins; remove from heat; cover & allow to steam for 5 min. Add apples, mango & extra spice if desired.
