Quinoa is high in protein, iron, calcium, potassium and other valuable nutrients and most commonly used as a substitute for rice in many recipes. Cooked quinoa is tender and seedy in texture, while mildly nutty and earthy in flavor. The two differences between black quinoa and white or red quinoa is color and cooking time; black quinoa needs an additional five minutes in cooking time. Like most grains, black quinoa can be used in both baking and cooking applications.
