Gluten Free Vanilla Cupcake Recipe

For this recipe you will need: 

For the Vanilla Cupcakes: Basic Vanilla Frosting:
¼ cup (4 tablespoons) unsalted butter, at room temperature
⅔ cup raw sugar
1 large egg
1 teaspoon vanilla
1⅓ cups Gluten Free All Purpose Flour
1½ teaspoons baking powder
Pinch of sea salt
½ cup milk
½ cup (8 tablespoons) unsalted butter, at room temperature
3 cups powdered sugar
1 teaspoon vanilla
Pinch of sea salt
2 tablespoons of cream, or milk

Let’s Get Started!

To make the cupcakes you will first need to preheat your oven to 350°F. Get your muffin pan ready by lining it with paper liners.

To make the cupcake batter, mix the butter and sugar until smooth in a large bowl. This can be done with a fork or with an egg beater. Once your butter and sugar are evenly combined (no clumps) you can stir in the egg and vanilla.

Now in a separate bowl, mix your flour, baking powder, and salt. Add the mixture to the wet ingredients and stir briefly. Then add the milk to the bowl and stir all the ingredients until the batter has a smooth consistency with no clumps.

Once your batter is mixed fill each cupcake liner a little over half full. Do not fill them to the brim or they will overflow and loose that perfect cupcake shape.

Bake each batch for 18-20 minutes, until the cupcakes have a round top and a golden color.  Make sure to transfer the cupcakes to a rack and cool completely before frosting.

To make the vanilla frosting, beat the butter until smooth. Then gradually sift in the powdered sugar as you continue to mix. Once they are combined add the vanilla, salt, and cream or milk and beat until the icing is smooth.

Once you make sure your cupcakes have adequately cooled you may begin icing them. Transfer the frosting to a piping bag fitted with a tip of your choice and pipe in a circular motion.

(You can also spread the frosting with a spatula or butter knife. Add sprinkles, decorative candy, or candied fruit for added flair and flavor.)
